SNP self-care pack - Sept 25th

Things are heating up as we head into our final weeks of lockdown. This week’s self-care pack takes a trip to Calabria thanks to the star ingredient – ‘nduja. For those who are yet to come across ‘nduja, think of a spreadable spicy salami, that’s made bright red from fiery Calabrian peppers.

 

This is an incredibly simple sauce to make that packs a punch. The ‘nduja is there to add flavour while the other ingredients – lemon, mascarpone and cherry tomatoes – play the role of balance. Of course, you can tweak the heat to suit your tastes. You’ll toss this three-step pasta sauce through freshly made lemon zest tagliatelle and serve alongside a sprightly bunch of rocket and a cherry tomato and olive focaccia.

 

For an indulgent end to your night (you deserve it), you’ll also receive a freshly baked apple, rhubarb and coconut crumble from PiOiK that’s just perfect to serve with your left-over mascarpone. Feeling fancy? Match your dish with this wine - a favourite of mine (and at DRNKS), a versatile all rounder. Unoaked chardonnay from organic fruit in the Adelaide Hills. It has a little bit of richness and juiciness that will work really well with the spice and citrus.
